How do I use beef gelatin correctly?

First, stir or sprinkle the gelatin into a small amount of cold water and let it soak for about 5 minutes. Then dissolve it over low heat while stirring—do not boil.

Afterward, you can stir it directly into warm dishes. For cold dishes, it’s best to first mix a small amount of the cold mixture with the dissolved gelatin and then fold it in.

How much gelatin do I need?

As a general guideline, we recommend about 9 g of gelatin per 500 ml of liquid. The amount may vary depending on the recipe and the desired consistency.

For softer creams or desserts, you’ll usually need less gelatin; for firm gummies, cake fillings, or aspic, you’ll need more.

Gelatin sets and is primarily used in cooking for desserts, creams, sauces, or gummies. Collagen hydrolysate does not set and can usually be stirred directly into beverages, coffee, shakes, or meals.
